Georgian “fluffy & flat” lavash bread

This obviously not my own recipe but it’s so yummy and goes perfectly with Chilli or any soup or stew, so I have to share it! There is another way of making it, in a shape of a boat, with yummy cheese stuffing and an egg. As soon as I make it again, I will post the recipe for that as well 🙂
Lavash

Ingredients : (2 large lavash, enough for 4-5 people)

500 g Strong flour
1 packet of fast acting dry yeast
1 tbsp honey
2 tsp salt
280 ml warm water
1 tbsp olive oil

Into warm water add the honey and yeast, stir and leave for 10 min

Sieve the flour, add salt, and slowly add the bubbling yeast in honey water, I mix it for about 5-6 min in the mixing machine with a bread dough hook. The dough should be tight and elastic. Place it into an oiled plastic bowl, cover with clingfilm and leave it in the warm place for about half an hour or until it doubles.

After half an hour, take the dough out, divide into two, put into two round ovenproof dishes that’s been oiled, and carefully, using your finger tips stretch the dough until its resembling pizza base, around 25-30 cm diameter.

After you stretch the dough, cover with clingfilm and leave for another 25-30 minutes.
In the mean time warm up the oven to 180 C. Bake for 10-15 minutes, it should start getting nice colour. If you want the top extra crunchy, as soon as you take it out, sprinkle with tiny bit of water and wrap in a kitchen towel for min.
